Makes about 5

1 cup flour (all-purpose)

1 Tablespoon baking powder

1/4 teaspoon salt

1 Tablespoon flaxmeal

1 teaspoon Apple Cider vinegar

1 Tablespoon maple syrup (optional)

1 Tablespoon grapeseed or canola oil

2 teaspoons vanilla extract

1 cup or more of plant-based milk

oil cooking spray

In a large bowl, combine flour, baking powder and salt and whisk.

Next add remaining ingredients and whisk. Batter move when whisked. If too thick, add milk a tablespoon at a time until desired consistency. Allow to rest for 5 minutes and heat up non-stick skillet.

Spray skillet with a whisp of cooking spray and cook batter about 1/3 cup at a time.

Flip pancake when bubbles appear and break. Make sure pan doesn't get too hot or pancakes will burn before flipping.

Top with lots of fruit - like bananas, blueberries, apple slices.
