Pumpkin Spice Oatmeal

adapted from PCRM Spiced Pumpkin Oatmeal

Rock your pantry with this recipe. Just keep oats, canned pumpkin and spices on hand and you're set. I simplified the PCRM recipe by using pumpkin spice mix, but if you don't have it the PCRM recipe shows the spices that make up pumpkin spice mix (cinnamon, nutmeg and ginger). The PCRM recipe is for 4 servings. The recipe below is for one serving. I like to make mine fresh in the morning. I also used fortified almond milk instead of water to add calcium.

1 serving

  • 1/2 cup old-fashioned rolled oatmeal

  • 1 cup unsweetened almond milk or water

  • 1 Tablespoon raisins

  • 1 Tablespoon dried cranberries

  • 1/4 cup canned pumpkin

  • 1/2 teaspoon agave nectar (2 tbsp.)

  • 1 teaspoon pumpkin pie spice mix

  • 1/4 teaspoon

  1. Combine all ingredients in saucepan. Cook over medium heat until liquid is mostly absorbed, stirring occasionally.
