Lemon-Ginger Dressing

This dressing is great massaged into greens like kale. This recipe should make enough for about 2 bunches of kale.

4-inch fresh ginger, grated finely

Juice of 4 juicy lemons

1/4 cup Agave syrup

Add ingredients to a small bowl with a fork or whisk or shake in a jar. Store in a jar in the refrigerator. Apply dressing immediately before eating. It's better store dressed greens for only a day.

NOTE: Make it a BOWL- add kale, cooked black beans, cooked quinoa or brown rice, chopped red/green/yellow/orange peppers.
