French Toast

1 cup plant-based milk

T cornstarch or arrowroot

1 teaspoon cinnamon

1/8 teaspoon salt

1/4 cup chickpea flour

1 teaspoon vanilla

4-6 slices of bread (preferably day old)

fruit for topping

syrup (optional)

Whisk milk, cornstarch/arrowroot, cinnamon and slat together in a bowl.

Add chickpea flour and vanilla to bowl and whisk until well blended.

Pour mixture into a shallow pan like a pie pan.

Dip bread into mixture and allow to soak in, flip bread and allow to soak in.

Heat a fry pan and spray with non-stick spray. Cook bread on one side until brown (about 3-4 minutes per side). Flip and brown second side.

Serve topped with fruit.
