Carrot Salad



¼ cup of vegan mayonnaise*

1 10 oz. bag of shredded carrots

2-3 green onions, chopped (optional)

1 chopped apple

1/4 cup + 2 Tablespoons balsamic vinegar

salt to taste (optional)

1/4 cup dijon mustard

1 teaspoon cumin

2 Tablespoons maple syrup



Blend dressing of mayonnaise, vinegar, mustard, syrup, cumin and salt in small bowl. Pour over carrots, apples, and green onions and blend in dressing. Allow to sit for flavors to gel for about 20 minutes.
