1 block firm or extra firm tofu
1 teaspoon ground cumin
1 teaspoon ground ginger
2 Tablepoons low-sodium soy sauce
Preheat oven to 300 degrees.
Remove tofu from the pack, cut into 12 slices (cut into quarters, then cut each quarter into three slices. Mix marinade ingredients.
Place 1-layer of tofu slices in a dish and marinate overnight.
Put parchment paper on a baking sheet and place tofu on the baking sheet spaced apart, and pour marinade over tofu.
Bake for 90 minutes, flipping every 30 minutes.
Note: Use in stir fry, salad, as a snack or as a sandwich filling. Great warm or cold.
