This granola recipe is adapted from feastingonfruit recipe.

Granola*
1 3/4 cup rolled oatmeal
1/4 cup hemp seeds (or chia seeds)
1/4 teaspoon cinnamon
1 teaspoon vanilla
1/4 cup Maple syrup or agave syrup
pinch of salt
"Baked" Apple
1 apple
1/4 teaspoon cinnamon
2 teaspoons water
FOR GRANOLA: Preheat the oven to 375 degrees F.
In a medium sized bowl, combine all of the granola ingredients and stir to coat with syrup.
Spread granola mixture on a baking sheet covered with parchment paper.
Bake granola for 5 minutes, stir and continue to cook for 3-5 more minutes. Checking at 3 minutes to make sure it doesn't burn. Allow to cool for about 30 minutes. Store in an airtight container at room temperature.
FOR "Baked" Apple:
Wash and chop apple into large dice. Add cinnamon and water and stir. Put in microwave and bake until apple is soft about 3-5 minutes depending on the power of your microwave. Apple can also baked in the oven at 350 degrees F for about 30 minutes.
To eat, top "baked" apple with generous amount of granola and enjoy. You can also add a dollop of plant-based yogurt for creaminess. I like So Delicious Vanilla Coconut Yogurt.
*NOTE: granola can also be layered with yogurt and diced fresh fruit to make a parfait.
