Pumpkin Spice Oatmeal

  • 1/2 cup old-fashioned rolled oatmeal
  • 1 cup unsweetened almond milk or water
  • 1 Tablespoon raisins
  • 1 Tablespoon dried cranberries
  • 1/4 cup canned pumpkin
  • 1/2 teaspoon agave nectar (2 tbsp.)
  • 1 teaspoon pumpkin pie spice mix
  • 1/4 teaspoon
  1. Combine all ingredients in saucepan. Cook over medium heat until liquid is mostly absorbed, stirring occasionally.

NOTE:  I simplified the PCRM recipe by using pumpkin spice mix, but if you don't have it the PCRM recipe shows the spices that make up pumpkin spice mix (cinnamon, nutmeg and ginger).  The PCRM recipe is for 4 servings.
