Nacho Dip

  • 2 cups potato, diced
  • 1 cup carrot, diced
  • 3/4 cup water
  • 1/4 cup nutritional yeast* 
  • 2 Tablespoons soy sauce
  • 2 Tablespoons fresh lemon juice (about 1 lemon)
  • 1/2 tsp onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric
  • dash of cayenne pepper
 

1.  Boil potato and carrot in water until soft about 15-20 minutes. 

2.  Strain and add to blender.

3.  Add remaining ingredients to blender and process until smooth.

4.  Enjoy with chips or sliced vegetables. Also great on steamed broccoli or nachos.
 

NOTE: *nutritional yeast is not bakers yeast. It is an inactive yeast that can be found at Trader Joes in the baking section, Mom's or Whole Foods in the bulk or spice section.
