Jane's 3-2-1 Vinaigrette Salad Dressing

Adapted from: Anne Crile Esselstyn - Compassionate Diet and Lifestyle Advocate in Forks Over Knives book edited by Gene Stone
This easy basic dressing is a go to for me as it is oil free (thus fewer calories) and uses pantry-friendly ingredients.
- 3 Tablespoons apple cider vinegar
- 2 Tablespoons dijon mustard of choice
- 1 Tablespoon Agave syrup
Combine ingredients and blend with fork/whisk or shake in a jar. Store in a jar in the refrigerator.
NOTE: The original recipe uses balsamic vinegar, which will give you a stronger vinegrette. The origina recipe also recommends any mustard (which I agree with), and uses maple syrup for a sweetener. I use agave but syrup works great too.
