If you're like most people, you probably think of your Instant Pot as a great way to make quick and easy meals. But did you know that it can also be used to create delicious stocks and broth? Making stock in an Instant Pot is incredibly easy and can be a great way to use leftover vegetables. Best of all, unlike many store-bought stocks, you can control the ingredients in your homemade stock to ditch any preservatives or extra unnecessary ingredients.
To make a basic stock, simply combine water, any vegetables (or vegetable leftovers like the ends of carrots, the onion skins, herb stems, celery root), and a bay leaf that you have on hand. Set the Instant Pot to its 'soup' setting and let it work its magic. In just an hour, you'll have a rich and flavorful stock that you can use in all sorts of recipes. So next time you're looking for a way to add some extra flavor to your cooking, consider making a batch of Instant Pot stock. It's sure to become a new kitchen staple.
TIP: You can save your veggie scraps in a freezer-safe container or ziploc bag in the freezer until you’re ready to make stock. I usually put about 4 cups of vegetables in the instant pot and then fill the pot with water. I don't recommend adding bitter vegetables to your stock like broccoli, kale, etc.
