Creamy Tomato Soup and Sandwich

  • 28oz can whole peeled tomatoes

  • 28oz can tomato puree

  • 16oz coconut creamer (like so delicious)

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 1 cup vegetable broth

  • 1/2 teaspoon celery seed

  • 1/2 teaspoon oregano

  • 1/4 teaspoon red pepper flakes

 
  1. Combine all ingredients in crockpot and cook on low for 6-8 hours.

  2. Blend, mash or puree to your liking and stir.

To Freeze and Cook Later

 

Label your freezer bag with the name of the recipe, cooking instructions, and use-by date (three months from when you prepped the meal). To your freezer bag, add all ingredients. Remove as much air as possible, seal, and freeze for up to three months. When ready to cook, thaw in the refrigerator overnight or in the morning in water and then follow the cooking instructions above.

 

Serve with a salad and/or chickpea salad sandwich.
