Nothing says summer more than the sweet and juicy taste of watermelon. This versatile fruit is a great way to stay cool in the heat, and it's packed with essential vitamins, minerals, and nutrients that can help boost your health. Plus, there are plenty of tasty recipes that you can make with watermelon. Let's look at some of the benefits of watermelon and a few summer-ready recipes you should try.

 

Benefits of Eating Watermelon

Watermelons are incredibly nutritious and contain high amounts of vitamins A, C, and B6, potassium, magnesium, lycopene (an antioxidant), and dietary fiber. These vitamins and minerals have many positive benefits for your health, including reducing inflammation in the body, helping to regulate blood pressure levels, improving digestion, promoting healthy skin and hair growth, boosting immunity to fight off illness, aiding in weight loss efforts, increasing energy levels throughout the day, and supporting eye health. Additionally, watermelons are low in calories but high in fiber, making them an excellent choice if you're looking for a healthier snack.

 

Summer-Ready Watermelon Recipes

When it comes to making delicious recipes with watermelons this season, there are plenty of options available! Here are three recipes that are sure to delight your taste buds while providing essential nutrition:

  • Watermelon Pizza– Top watermelon with coconut cream, blueberries and peaches for a fun refreshing dessert.  For the recipe use this link.   This will be a conversation started and first for cookout guests. 
  • Grilled Watermelon– Slice a seedless watermelon into 1” thick rounds and brush them lightly with oil. Grill over medium heat until you have grill marks on both sides, and then drizzle with honey or agave nectar before serving. 
  • Watermelon Agua Fresca– For an easy summer cooler, blend chunks watermelon in a blender with a little maple syrup (optional) and water. Divide mint and lime wedges into 4 glasses and muddle.  Add ice and pour over watermelon water.  until smooth and strain through a sieve if desired.  Recipe:
    • ½ large watermelon
    • 2 TBS maple syrup
    • 1 cup water
    • ¼ cup mint leaves
    • ½ Lime (sliced into wedges)
