Coconut Yogurt Stuffed Apples (1 serving)

Apple (cut in half, seeds, core removed, and scooped out) - 1/4 cup Unsweetened Coconut Yogurt (my favorite is Harmless Harvest brand)
- 1 tbsp Powdered Peanut Butter (reconstituted)
- 1/4 tsp Cinnamon
- Add a little water to peanut butter powder until it is creamy.
- Place the apple halves onto a plate and evenly divide the coconut yogurt, peanut butter, and cinnamon onto each half. Enjoy!
Notes:
Leftovers: Best enjoyed immediately.
Additional Toppings: Chopped nuts, seeds (hemp, chia or flax), granola, agave syrup, maple syrup, coconut flakes and/or berries. Everything but the berries may add significant calories from fat.
More Protein: Mix protein powder into yogurt.
No Powdered Peanut Butter: Use other nut or seed butter instead.
